Green garlic butter loaf

Really, this is just a homemade garlic bread but that title sounded a little stagnant. So here you have my green garlic butter loaf! I call it that because the amount of parsley I use turns the butter a lovely shade that I would probably name ‘meadow green’ or ‘lush fern’ if I were given the task of naming a similar paint colour. Anyway, this is a really simple recipe but a great one for pasta nights or guests because it tastes amazing, is quite impressive and takes very little effort. Once you make this homemade garlic bread, you’ll rarely go back to the shop bought stuff!

Ingredients:

  • 50g salted butter

  • 2tbsp olive oil

  • 4 garlic cloves

  • 2 handfuls fresh parsley

  • 30g grated pecorino or parmesan

  • 1 crusty bread loaf (tiger or white bloomers work particularly well I find)

Method:

  1. Preheat the oven to 200c/180c fan.

  2. Add the butter, olive oil garlic and parsley to a food processor and pulse until you get the consistency you’re after. I quite like mine to be a little rustic and chunky, but smooth would work just as well.

  3. Cut the loaf on both diagonals to create a criss-cross pattern and then stuff the butter in the slits.

  4. Sprinkle over the grated cheese and bake for around 15 minutes.
