Honey butter french toast

It turns out that brioche, honey, brown sugar and butter make for a very delicious and life affirming combination. Who’d have thought it?

Inspired by Japanese technique and a bakery in London, this honey butter French toast is a lot more straightforward to make than classic Western French toast where the bread is soaked in an eggy mixture and you easily run the risk of ending up with a flabby, soggy and slightly sulphur-y slice of bread at the end of it.

The coating for the brioche is simply a sweetened butter mixture and this creates a crunchy, caramel like outer layer to encase the pillowy brioche inside.

I topped mine with whipped cream and more honey here but ice cream or yoghurt with a scattering of fruit would be lovely, too! I really hope you enjoy it.

Serves 2

2 thick slices brioche

80g butter

50g light brown sugar

3tbsp runny honey

Whipped cream or ice cream for serving

Method

Preheat the oven to 180c.

Slice off the crusts of the brioche slices.

Using a mixer (or by hand), beat together the butter, brown sugar and honey until smooth and velvety.

Using a bread or palette knife, spread the butter mixture evenly over all sides of the brioche slices and place onto a baking sheet lined with baking paper.

Drizzle a little more honey over the slices if you like for extra caramelisation and crunch.

Bake for 8 minutes on one side before flipping the toast and baking for another 8 minutes.

Remove from the oven and leave to cool for 5 minutes.

Serve with ice cream or whipped cream and another drizzle of honey!
