Tahini & apple slaw
This tahini and apple slaw is my ultimate slaw because I love a bit of sweetness in my slaws and the apple and tahini work so well together here! It’s also a really good way of getting a decent amount of veggies, fruit and healthy fats in to your diet in one go and works on the side of so many things: burgers, fritters, chillies, jacket potatoes…the list goes on.
It’s also really easy to throw together.
Ingredients:
1/2 finely sliced red onion
1 grated carrot
1 grated apple
1 finely sliced small red cabbage
2tbsp tahini
1/4 cup Greek yoghurt (or soy yogurt)
salt to taste
fresh coriander
juice of 1/2 lemon
Let’s be real - no one needs a method for this one…just throw it all together and mix. My only insightful instruction here would be to let this sit for at least half an hour to allow the flavours to all mingle together for maximum flavour.
