Spicy pineapple roasted aubergine πŸπŸ†πŸŒΆοΈ

This spicy pineapple roasted aubergine is the perfect balance between sweet and savoury! It’s quite spicy so you can adjust to your taste by tasting the marinade as you go. The marinade itself is so versatile and you can use it to roast so many things, or you can use it as a pineapple salsa!

Ingredients for the marinade (makes enough marinade for 2 aubergine or fish or meat of your choice):

  • 1/4 cup pineapple chunks

  • 1/2 red chilli

  • handful corinader

  • 2 garlic cloves

  • juice of 1/2 lime

  • 2cm piece of ginger

  • 1tbsp soy sauce

  • 3 rings of a jalapeno

  • salt to taste

  • 3 spring onions

  • 1tbsp brown sugar

  • 1tbsp neutral oil

  • 2 aubergines

  • 1 red pepper

  • 1 red onion

  • extra pineapple chunks for roasting

Method:

  1. Preheat the oven to 200 degrees c

  2. Make the pineapple marinade by adding all of the ingredients into a blender and blitzing until relatively smooth

  3. Half the aubergines and score with a knife

  4. Pour the marinade over the aubergines (flesh sides up) and leave to marinade while the oven heats up

  5. Arrange the aubergines into a baking dish and scatter some chopped red pepper, onion pieces and pineapple chunks around the aubergine

  6. Drizzle the dish with a little oil and place into the oven for around 30 minutes.

  7. Remove from the oven, sprinkle over some more coriander, squeeze over some more lime juice and serve with whatever you like (egg fried rice or rice and peas both work well.)
