Salmon burgers with pineapple salsa & burger sauce aioli

Fruit and fish sounds like a match made in hell but this combo gives all the tropical vibes and is so packed with flavour! Burger sauces often require a whole host of different ingredients so this is an easy and quick version that includes shop-bought burger sauce but with a couple of added flourishes.

Ingredients (makes 2 burgers):

  • 2 fresh salmon fillets (250g)

  • 1tbsp mayonnaise

  • squeeze of lemon

  • 2 finely chopped spring onions

  • 1tbsp sweet chilli sauce

  • 2 burger buns

  • salad leaves for the base

To make the pineapple salsa:

  • 3 rings of canned pineapple ( or around 150g of fresh)

  • 2 finely chopped spring onions

  • 1/2 large tomato finely chopped

  • squeeze of lemon juice

  • 1tbsp sweet chilli sauce

To make the burger sauce aioli:

  • 1tbsp shop-bought burger sauce

  • 1tbsp mayonnaise

  • 1/2 clove minced garlic

  • squeeze of lemon

Method:

  1. To make the salmon patty, really finely chop the salmon into approximately 2cm pieces

  2. Add the rest of the ingredients to the chopped salmon (aside from the burger buns and salad leaves obviously)

  3. Wet your hands slightly and use your hands to form the salmon mixture into 2 patties

  4. Pour a little oil into a frying pan and once hot, add the patties and cook for around 3 minutes on either side.

  5. Spread the burger sauce onto the warmed base of the burger bun, top with the salad, the patty, the salsa and more of the burger sauce
