This is my fail-safe favourite 20 minute dinner and is so delicious with the slightly sweet, salty glaze and the meaty but soft aubergine. I keep it simple by serving it with rice and topping with whatever fresh greens and herbs I have to hand! Spring onions are a must for topping.

This aubergine takes 20 minutes to cook in an air fryer, which is how I like to cook it, but a regular oven is fine.

Time to cook: 20 minutes

Ingredients (serves 2):

  • 1 large aubergine

  • 1tbsp white miso paste

  • 2 minced garlic cloves

  • 1/2 tsp smoked paprika

  • 1tsp sugar (you could use maple syrup)

  • 2tbsp vegetable oil

Method:

  1. Whisk together all of the ingredients

  2. Cut the aubergine in half and score with a knife

  3. Brush the glaze over the aubergine halves and bake in the air fryer at 180 degrees c for 20 minutes or in the oven at 200 degrees c for 15-20 minutes.
