Mediterranean halloumi & bean bake

This is a great one for weeknight dinners because you just need one pot and it’s an all in one dish!

This served 2 portions and I served with crusty bread!

Ingredients:

  • 1 can cannellini beans

  • 1 block halloumi

  • 1tsp smoked paprika

  • Handful olives

  • 1 white onion

  • 3 garlic cloves

  • 1tbsp tomato puree

  • 1/2 cup sun dried tomatoes

  • 1/2 yellow pepper

  • Parsley for topping

Method:

  1. Fry the halloumi in a little olive oil and sprinkle over some smoked paprika. Cook until golden.

  2. Remove the halloumi from the pan while you make the beans.

  3. Finely chop the onions, pepper and garlic before cooking with a little oil in a pan until soft.

  4. Add the smoked paprika, beans, tomato puree, sun-dried tomatoes and season with salt to taste.

  5. Cook for around 10 minutes before topping with the halloumi, the herbs and olives.

Serve with bread, roasted potatoes or a salad and enjoy!
