20 minute, 5 ingredient quiche

I love a homemade quiche, but they can take a long time to make. I’ve cut a few corners here but it’s resulted in a ridiculously easy and really tasty quiche loaded with lovely green veggies.

Ingredients:

  • 1 sheet ready-rolled shop-bought puff pastry

  • 6 eggs

  • 50ml milk

  • 50g mature cheddar cheese

  • your choice of green veggies (I use asparagus spears sliced into halves and broad beans)

Method:

  1. Preheat the oven to 180 degrees c (fan)

  2. Line a baking dish (go for something medium in size that nearly the whole sheet of pastry can cover)

  3. In a separate bowl, whisk together the eggs, milk, cheese and season generously with salt and pepper

  4. Pour the mixture into the pastry-lined dish (you don’t need to blind bake the pastry)

  5. Top with your green veggies and bake the quiche for around 20-25 minutes or until the eggs have set and the pastry is golden and crisp
